Polyploidy affects fillet yield, composition, and fatty acid profile in two-year old, female rainbow trout, Oncorhynchus mykiss

Gonadal development in fish is a dominant physiological process that alters growth and fat metabolism, thereby affecting fillet quality. Sterile, triploid (3 N) female rainbow trout are generated by pressure-induced shock of zygotes (3NP), crossing diploid (2 N; fertile) tetraploid (4 male to produce offspring 100% the time (3NC; sterile). We have shown intercross-triploids (3NC) faster rates than triploids (3NP). Using subset these animals, we examined yield, texture fatty acid composition; additionally, composition triglycerides phospholipids was determined. Variables were measured immediately prior ovulation animals. Separable muscle as percent whole body weight higher (P ≤ 0.05) 3NC (46.5%) compared with 3NP (43.6%) fish, both had yields 2 N (38.3%) individuals.
